    How long can ferment in plastic bucket?

    Follow-up question as I haven't found any threads that quite answer this question: How long is too long in the plastic bucket on a yeast cake? What's the concern when it has been too long? I'm looking at close to a year with an RIS that I kind of forgot about.

    I basically made the same beer but used some Citra hops I had in the freezer. It's really hard to imagine the wort without the sweetness, but there is definitely a noticeable tang competing with the sugars. I'll update once fermentation slows down and I taste it.

    BTW, I decided to use a lot of C120 based on BYO's clone of Gonzo Imperial Porter, which I think has a nice dark fruit character and has a similar OG. Still, I'm going to cut back, as I don't want to overdo it on my first try.
