    Hefes I ferment 7-10 days. Hefes are generally better younger than older.

    FWIW, I marked my wooden stir paddle with a sharpie. I hasn't worn off in 3 years of brewing and it's cheap and easy. My other kettle has a sight glass which is much nicer.

    Not to comment on the rest but I've never had a "rotten egg" smell from fermenting beer. Cider and wine, yes. That smell would worry me.

    I do nothing and have never had a problem. Chill as quickly as possible, then aerate and pitch.

    I would always defer to Yooper but that first picture didn't look bad to me. If you've made it this long without some major growth, surely (Shirley) you're in the clear. Any new photos to post? What is the current gravity and the predicted FG?

    Surely (Shirley?) you would notice if you left 40% of your beer behind. Is there really that much left after transferring?

    If your FG was 1.005 and it was consistent for 2 days, you're fine.

    Krausen is foamy stuff that forms as the result of yeast fermenting. Since you are supposed to be done with fermentation by the time you bottle, active fermentation after bottling is bad. You tend to get bottles that explode.

    I was convincing myself that the first photo looks like krausen.....but the other look like floating sediment. I still don't think I've ever had sediment rise in the bottle like that but I can't say it looks infected from those pictures. The FG doesn't seem to be the problem.

    I don't have anything at the top of my bottles. Sediment (cloudy beer or at the bottom)? Yes, but not at the top. What was your FG before bottling?
