Trying to make non-dry brew / malty biere de garde with Belle Saison

Ok. That sounds like a plan that I'm going to try. Two more questions : 1). the equipment infection concerns that jdauria mentioned - valid? I had heard that sour yeasts infected equipment once used, but wasn't aware that saison yeasts did the same. And 2). by Old World yeasts - continental I'm...

Kviek yeast for lagers...talk to me

I have a question for this thread : I did an Oktoberfest-style with Lutra once. It was decent, no off flavors; it was NOT a true lager, I understood and understand this, going into the future when I try this recipe again. My complaint about the beer wasn't its flavor, but body : very thin. I've...

Trying to make non-dry brew / malty biere de garde with Belle Saison

This may not be possible, and if not, understood, but....I (mistakenly) bought some Belle Saison yeast, that I don't want to waste. I am not a particular fan of Saisons, which makes this mistake perplexing, I understand, but I bought the yeast for its good response to ambient temperatures that...

    What are you drinking now?

Stone Delicious IPA. Lives up to its name. Seems almost sacrilegious to serve it in a Bud Light pint.

    What are you drinking now?

The Baremore Tavern's eponymous IPA, brewed by Pinelands Brewing LEH NJ, inspired by the Leeds Devil just a few miles down the road.

What I did for beer today

Interested in how this recipe turns out. I'm going to give Kveik one more try this summer.

    The Home Made Pizza Thread

HBT has inspired me to try homemade pizza, if using pre-made dough counts.

    Abba Zabba?

    What are you drinking now?

Couple of flights at Able Baker, Las Vegas. Atomic Duck IPA and Bionic Duck Project DIPA were the standouts.

    Some authentic Belgian wit recipes?

Just a question : I'm (sort of) modeling my upcoming wit on this recipe, but was wondering about the grain bill : 25 lbs of grain seems like a lot for a 10-gallon batch, unless I've been lowballing my grain bills for years. For a ~4 gal batch, I was going to do : 3.75 lb pilsner 2.75 lb flaked...

    So What Now?

I was willing to pay Amazon 10 bucks for a pack and did, and then my order got cancelled / money refunded. Caveat emptor.

    Some authentic Belgian wit recipes?

If I'm looking to make an Allagash-similar recipe with T-58 yeast, do I have to back off on the spices in these recipes I'm finding, since in my experince Allagash is much less spicy that Hoegaarden?

What do I brew for my girl?

AK, you've said so many good things about this yeast, that I just bought a packet. I'll have to try a Kolsch with it in the fall.

    What are you drinking now?

Not completely holiday-appropriate, but quite delicious.

    So who's brewing this weekend?

Brewed ~5 gal Enza-style cold IPA. Mostly uneventful, except for an unusual amount of foam in the wort after mashing. First time I've encountered this in 34 batches. Also, if someone hapless like myself loses the smaller cap on a 32-oz Star-San, the cap from a Frank's Red Hot fits perfectly.
