    Wine without sulfate

    I'm planing to use NovaLager Yeast with Winexpert Kit to avoid producing sulfate/sulfur . at least that what the LalBrew claim that NovaLager doesn't produce sulfur . however since sulfate works as preservative / antioxidant I'm planing to use ascorbic acid for that job instead What you think ?

    Bottle conditioning > do we need Oxygen ?

    I'm going with Bottle conditioning but I'm wondering if i would have to purge the bottle with CO2 ? doesn't yeast need some Oxygen for the second fermentation in the bottle ?

    bottle conditioning . i just found this great video suggestion to use Plastic/Pet bottle and squeeze the bottle to force most of oxygen out . sounds like a great idea

    everything is fine when fermentation start but almost all the time when it come to the end let's say 10 points from the target specific gravity it become very slow and sometimes takes days to move a point or tow . it doesn't matter what yeast type or what beer style this happen all the time is...

    I try that and used Lutra yeast+ Propper seltzer and never got clean seltzer . always have this weird aroma . i see some people have better result with same yeast i don't know how they get that without some type of filtration
