Do dried elderberries produce the dreaded green goo like the fresh ones do?

@Raptor99 . I think I saw a post you were talking on winemakingtalk.com about elderberries...specifically the green goo. Do you have any idea if the dried elderberries produce such a goo? I have 4 lbs of dried elderberries I want to start experimenting with, but I'm hesitant because of the...

Different woods to age meads on

Has anyone ever tried aging on Mesquite wood vs oak or other woods? If so, what was the flavor profile like? Did it give any off flavors? I recently came into this site that has more woods than I've seen previously, but still no Mesquite...

    What a beautiful swirling color

So, while stabilizing & racking my apricot/vanilla mead to a clean sanitized bucket the other night, this gorgeous mead was mesmerizing to watch while being racked. Truly a first for any of my meads to have this type of visual effect.

Question about fermenting dried fruit treated with sulfur dioxide

I'm fairly certain I remember reading that fruit (dried or otherwise) that has been treated with sulfur dioxide should NOT be used to ferment with. I saw this bag of fruit medly ( while hunting for dried, unsulfured, unsweetened apricots) that sounds like it would make for an interesting...

    Question about cranberries

I have a pumpkin cyser going, but, has no pumpkin spices in primary. I have whole, fresh, uncooked, unsweetened cranberries that I had bought to make homemade cranberry sauce for Thanksgiving but never got around to making. Since I do not want to waste them, I would like to split 1 gallon of...

Question about microwaved soft caramel from an old bochet post

bernardsmith said: Certainly darkened the honey but I don't think that there is any strong presence of caramelization by nose or taste. Which is not to say that this batch tastes bad. Just not as caramelized as I had wanted. But not to be outdown I made a batch of (soft) caramel in my microwave...

What do people make cysers with? Pasteurized or raw cider?

I have made 2 successful cysers, so far. I used Simply Apple juice both times & had no issues, no complaints. Simply Apple is just pressed apples, what I would call raw, not pasteurized or chemically stabilized. My question is, what does everybody else use for theirs? I know to stay away...

I roasted pumpkin with butter, can I still use it in my must?

I bought a few sugar pumpkins 🎃🎃🎃 this weekend to roast for a pumpkin cyser recipe that I want to try. Preparation was simple; I cut the pumpkin into 1" slices, then they were coated in melted butter, then I added some light brown sugar cinnamon and fresh ground nutmeg. Roasted until soft &...

    New cyser tastes sooo good

I started a new cyser, (1 US gallon) on July 6. I used 1lb 12 oz of local to me wildflower honey, 1 cinnamon stick, a small handful of raisins, 2 bottles (1.6 qts/ea) of Simply Apple juice & half a packet of 71B rehydrated with Goferm protect. OG 1.110 I got busy with other things & didn't...

    BOMM addition looking awesome!

A while back I had made 3 gallons of BOMM. Some to drink as is, & some to make different fruit additions to. This is 1/2 gallon with a 12 oz bag of mixed fruit, (strawberries, blueberries, blackberries, and raspberries). I'll be racking off of the fruit this weekend & probably onto another...

    Time to make the mead.

So, last night, I started 3 separate batches, 5 gallons in total. 3 gallons of Acacia Rose BOMM, 1 gallon of cranberry-concord grape BOMM, 1 gallon of apple-peach-mango BOMM. Acacia Rose BOMM is by the recipe....a true BOMM, with a little less honey than the recipe called for. (3 gallons...
