    Thanks! for the off gassing expanation. Slower is better i guess. I dropped the temp to 40 first and then to 33. I used this paticular balloon as it folds over when the freezer lid is down. :)

    The instructions on Bell's A62 liquid yeast say refrigerate until it's time to pitch, and pitch cold. So that's what I did. I sent an email to Bell's General store asking about making a starter, they said it's not necessary. Fermentatio0n started pretty quick.

    Thanks for the advice about not using a secondary. I was never too keen on using the secondary, I just thought it was part of the process and went with it. Time to order my next beer kit. Belgian all grain I think. Erik

    I changed the settings to +4 F for a day and made another graph It does not make a big difference I set them both to +1 F for a day and did another graph, attached. I had the temp set at 63f .
