    I brewed a Pale Ale 4 days ago and am fermenting with US-05. Specs on US-05 say ideally ferment temp range is 59 to 72 F. I use a mini fridge in my garage with a temp controller set to 69. Problem is, Florida just realized it’s winter and overnight temps are now in the 30s! So my barn gets down...

    Thanks brownni! I didn't realize refractometers were sensitive to alcohol. I entered my numbers into some calculators and they seem a lot better, not where I want them, but might need to wait a little longer with my current beer. Also seems the cheap refractometers may be off by 10% or more...

    Thanks for the input. I am using an IR thermometer, I suppose that only reads the surface temp now that I think of it. I'll pick up a digital meat thermometer, or if any suggestions on a better one let me know. I have been using a refractometer since someone keeps dropping the hydrometers! (me)...

    Air lock activity started but now stopped

    So I found the air leak! There's a small puncture in the air lock itself. I remember when I was cleaning the air lock my 2 year old daughter grabbed it and put it in her mouth, she must have bit it! Does anyone use those 3 piece air locks? Do they work just as well?

    My Kilju experiment

    I was reading the back of a hard seltzer can recently and it seemed to point toward the alcohol being fermented sugar with a little extra sugar added after fermentation plus some flavoring. Have you tried hard seltzer, would it be similar to kilju?

    Definitely brewing this for the name!! Coontail what was your starting water/water to fermenter? Also, I've been looking into brewing a Gose, seems you need to keep PH under 5, did you check PH of yours?

    Yep, it's just under 5 gallon in there and it's a 7 gallon fermenter but I think 7.5 gallon would fit in there. I also brewed a small 1 gallon neipa batch and my other fermenters were full so I dumped the 1 gallon neipa in that 7 gallon fermenter. I just drank the neipa last weekend and it...

    Just pulled a gravity reading. I'm about 40 hours into the ferment, it is at 1.026. It started at 1.066 and should finish out around 1.015!     Yep, it's a 7 gallon big mouth. Now that I think of it, I didn't check the o ring for the lid before putting it on. But, yes there was a lot of air lock activity at first, hence my confusion as to it stopping all of a sudden. I'll check it out when I get home.
