    Infection?

    I put frozen fruit(blackberry, raspberry and blueberry medley) in the fermenter and I assume some wild yeast got in from the fruit. I now have a fruited sour. Definitely a film on the top and to me it does not look like yeast rafts. Let me know your thoughts, please.

    Instead of yeast starter...

    I have a dunkel going now but will be doing a roggenbier right after using the same yeast. Couldn't I just rack off the dunkel and pour fresh wort right on the trub/yeast cake? Any drawbacks to that?

    When to test the mash PH

    First post!! I am new to BIAB. At what point should I test the mash ph? How much lactic acid for a 5 gallon batch? Per my city water report, my water is 8.33 ph. I suspect this to be an issue when I get to mash. Thanks! David
