Charlie Talley (Five-Star Chemicals) Notes from Brewcasts

I was very curious about this as well so I emailed Five Star and asked them. This is the response: So I think I will use about 2-3 oz. per 5 gallons. Joe

I Win! I've Found the World's Best Fermenter!

The translucent one if it is made of high quality PET is a way better choice. One of the primaries advantages of high quality PET is that it is hydrophobic, mostly nonreactive and non-absorbent. It will still scratch easily so it should never be cleaned like a bucket. Because it is PET it should...

I Win! I've Found the World's Best Fermenter!

Ummm, because it says right in the PDF(from the first link you posted) that the clear ones are made of polycarbonate? Joe

    Hop Juice

4th'd. Just another over-the-top hop & crystal brew. Meh. Boring, uninspired and been done to death. It's like your 5th or 6th batch when you think "If a little is good, A LOT must be better!"

Charlie Talley (Five-Star Chemicals) Notes from Brewcasts

That is a very good question! I use 1.5oz per gallon. You go through it FAST at that rate. If I can get just as good performance with 2oz in five gallons I'll be happy.

Beersmith water & orig. gravity calcs don't seem to work right

Yep. I don't think I'm missing anything, I think Beersmith just has several fairly large bugs in how it does the calculations. Joe

Beersmith water & orig. gravity calcs don't seem to work right

Hi all, I asked this question over at the Beersmith forums but did not get an answer. Does anyone here have any ideas? Perhaps I'm not the sharpest knife in the drawer or I'm missing something obvious but the water and gravity calculations don't seem to work properly. It seems the OG...

    Pitch Rate, let's talk yeast

For years I've just bought two tubes of White Labs and not worried about it. That has worked well most of the time but after recently getting two 3+ day lags in a row I decided to start making starters. I brewed a dark mild last weekend and pitched it with a 2000ml Wyeast London Ale III starter...

    my first brew day

Awesome! Looks like you did a good job. The strength of fermentation is a poor indicator of OG so don't worry about it. You may consider wrapping a towel or something around your fermentor if you are going to fill it outside in the sun. Even a few minutes and you can get litghtstruck beer. Joe

I do love SLO. My Aunt lives in Cayucos so I've been spending part of summer up there since I was 5. I'm sure there is somebody here in Orange County that will jump on these. Joe

    How legal is underage homebrew?

I have a really old homebrew recipe around here somewhere. I'll have to dig it out and scan it in. I don't know how old it is but it reads something like that. Joe

    How legal is underage homebrew?

It is a little more complex than that. Federal law mandates that the minimum drinking age on base may be the same as that of the State/Country in which it is located. There is a "50 mile" rule that allows installation commanders to lower the age to that of a nearby country so long as it is...

15 year old beer: Safe to drink?

Oh man that reminds me... I have a can of Michelob in the fridge that is at least 10 years old. My brother is a pilot and one day he was flying August Busch somewhere. He said it was really funny, everywhere they went they handed beers to anyone standing around. When they went to get on the...
