    Could be the temperature in your basement is on the colder side and the bottles just need longer to carbonate? Typically I give 2-3 weeks before opening a bottle to make sure it ready.

    First brew day! It's finally here

    Correct, your gravity will be higher post boil due to boil off. Hang in there, brew days don't always go exactly as planned, but you always learn something and get better for it. Congrats on your first brew!

    Pumpkin spice stout/porter

    Good advice, I'll have to look how much is in there, but subtleties can go a long way, and be more pleasant than a blast of spices. Maybe use 1/2 packet and see what we get.

    First batch, first brew disaster. Need a suggestion

    I've been using the SP10 with no complaints. Yes it can be loud, but I don't personally find that to be a problem. I'm still able to have conversation with my brewing buddies without trouble. Nice burner for the money, heated up nicely even in the winter time.

    Thanks for the response! From checking out the Briess website it appears their Munich malt is a 50-50 blend, so that would put the Munich at 25% if I used that and the light dme. Would you still want to mainly use milder hops?
