    Beer maturity and forced carbonation

    Hey Jayni, I would say after you keg it and it has fully carbed, drink it and see. Most beers kinda settle it and get better as time goes on. But if you like it, then you are good to go. My problem is I can't keep my hands off the tap once it's carbed, so usually the keg is kicked in 2-3 weeks...

    There is software like Brewers Friend and Brewser that factor in wort with alcohol. You put in your OG in brix or SG and then you put in the FG and it accounts for the alcohol and gives you your ABV. I have done a side by side test with a hydrometer and it was pretty darn close.. More...

    I would let it ride for up to 21 days in primary. This will allow the yeast time to clean up the beer. Transfer to keg, set gas and cold crash. Test in 5-7 days.. Try to avoid large swings in fermentation temp. It stresses out the troops... Just my two cents.. Good luck.. Sent from my iPad...
