    Thank you for the suggestion. I found quite a bit about malto dextrine after reading your suggestion. If it turns out good I will send you a bottle. Looks like I will boil up and cool down 4 oz and add to fermenter.

    Gravity never takes a day off. Are you fermenting in plastic, glass, or stainless? Can you see a yeast cake, if glass?

    3 gallon batch in 5+ gallon fermentors

    I use a 6.5 gallon fermenter for a 5 gallon batch. And... I aerate with pure oxygen before pitching, so plenty of oxygen in the space. I wouldn't be afraid to try it.
