    I did a partial Boil of around 4 gallons starting. And steeped in the same amt. I got my saphir from Northern Brewer. http://www.northernbrewer.com/shop/german-saphir-hop-pellets.html You could sub in some more Hallertau if you can't get ahold of any saphir.

    I bottle carbed with 3.6 Oz of corn sugar. My last batch I used 4.2 Oz and it carbed up a lot better.

    Final Pour There was a decent head at the beginning, but trying to get the light just right to show how clear this brew was, the head dissipated.

    I also fermented this very warm about 82-85 F with a brew belt. I've actually brewed this twice more since the original post. It's definitely in my lineup now.

    This was an amazing saison. Great balance of the hops and the spice. It was close to the karbach, but I liked this brew slightly better.

    that's probably why it turned out darker than the SA. I already dumped the golden DME for Pilsen in my recipe for the next try at it.

    How to get the most flavor out of your fruit additions?

    you can also add a bit of pectic enzyme or liquid pectinase to the fruit after you crush it to aid in extracting the most flavor and aroma prior to adding it to the fermentor.

    I'm guessing it's in my equipment, not doing full boils atm, so IBU's being watered down.... Only thing I can come up with.

    Unfortunately the lighting/camera does not capture the clarity of this beer, but I assure you it almost looks filtered.

    you can always just do about a 4gal boil, hop and make the gravity to your liking, then split off her batch and add top off water to dilute both the ibu's and gravity down to her level and keep your high gravity high hop beer. of course i am an extract brewer atm so this is how ive split 2 beers...
