    Two Quick Lambic Questions

No sorry Rph it didn't help at all but thanks for contributing. Take a look here to enlighten yourself: https://www.lambic.info/Microbiology_and_Biochemistry#Stages_of_Lambic_fermentation Essentially there is a progression of dominance from a microbiological standpoint in lambic. It's present...

    Two Quick Lambic Questions

1)Doing 15 gallons of Lambic inspired beer in an oak barrel. How long are you guys waiting to remove the airlock and hard bung it? Initial fermentation and the disgusting aged hop krausen are gone. It's been in a month. 2) Can you solera a Lambic cask and get somewhat repeatable results...

Guide to Making a Frozen Yeast Bank

Found it. Their website kind of sucks http://cynmar.com/vials/19091-VIALS-KIMAX-GLS-PTFE-LINED-CAPS-23x85mm-10PK.html This is what I use for slants. PTFE lined resin caps and borosillicate glass. Overkill on size but I like them.

Guide to Making a Frozen Yeast Bank

I've never seen LAB grow on anything better than MRS, even somewhat fastidious **** like Pedio....I don't even bother with an anaerobic environment it works so well for most of the strains I utilize.

Guide to Making a Frozen Yeast Bank

WLD agar is super good at this cuz it is selective for non-sacc strains and differential due to pH based color changes.... or as stated above just add cyclohexamide (yeastman sells it) to PDA media. Then subculture according to colony morphology. Investigate further with microsopy, gram...

Guide to Making a Frozen Yeast Bank

Side note I've found through some of my research and wrangling.... plus backed up by some literature (don't ask me for a citation... I'm not digging one up).... It seems as if Brett needs to be reslanted significantly sooner than Sacc to keep viability decent at 36F/2C on UBA. Still looking...

Guide to Making a Frozen Yeast Bank

I autoclave my wort mixture in reagent bottles 50% full then once cool (and needing sterile wort), I manually pipette out what volumes needed....being careful and keeping the stock bottle sterile. I've had a stock bottle of wort for 2 months before. There's a significant amount of break...

    Slanting yeast

This is more common a problem I believe using a pressure cooker style of sterilization vs a truly automated autoclave. Pressure releases too quickly. When I make LAB broth to propigate bugs for a big kettle sour pitch (glucose, dme, dap and calcium carbonate) it always boils over making a...

    Slanting yeast

As the pressure releases, the boiling point changes and if the solution hasn't cooled down enough, it'll boil. That's one reason why you only fill containers half full when autoclaving. Also there are tons of nucleation sites for a boil to take off if there's some type of break material or...

Pics of Yeast under my new microscope

The problem with miscoscopes is that while a very low end model might get you in the game of cell counts (and make a significant positive impact on your brewing)..... you'll eventually become more inquisitive about small things and want better optics or you can't play.
