    +1 on the 2.5lb tank. I use one and the liquor store in town that does a lot of keg business swaps them out when empty. It fits in the fridge easily.

    Sweetening after ferm.

    I would suggest using sorbate. It is used in wine making to stop fermentation before it is complete or prevent fermentation from starting again when back sweetening. Once it is added you can back sweeten to your taste without worry of fermentation restart.
