I'm having a hard time getting my abv much past 3.5-4%. I'm brewing all grain my mash time has been consistently an hour and sparging for about 75mins. Any ideas anyone?

Does anyone have a good all grain recipe for a dark wheat beer? I've only brewed all grain twice so far and was successful with an Irish stout and a wheat. Now I want to try something a little different and unique. Maybe I'm blind but couldn't find anything on here.
