    Do I really need a bottling bucket?

    Bottling bucket makes it a heck of a lot easier they are only like 10-15 bucks. Also the priming sugar would have to be gently stirred in which would kick up the settled sediment.

    We can brew up here in New York. I think NY takes the cake as far as worst state for many reasons which I will keep to myself :)

    Is safale yeast always loose in the packet?

    Yes that is normal. I just used the safale us 05 is my current batch which is still in primary. I did not re-hydrate the yeast, fermentation took off in about 8 hours.

    1st batch has very high bitterness....is this normal?

    My very first batch I made I did something similar. I then took the advice to let it sit out of sight, out of mind, for a few weeks. After the few weeks it mellowed out and tasted much better.
