    Just wanted to give an update. I showed the photos I posted to a couple experienced brewers in our brew club and they had never seen anything like it or had an idea what caused it. That said, I kegged the beer today and it turned out good. I had my doubts!

    Only issue I've found a problem with is the 10.5 foundry immersion cooler is not tall enough to reach a 2.5 or 3 gallon batch. If you have another cooling method then it works great for small brews.

    I clean with oxiclean so shouldn't be the cause. I am using Briess grain. I've never seen or experienced anything like this.

    I have used pilsner out of this bag several times before without problems. I buy bulk grain from the local craft brewery. I did taste the wort. Besides being very sweet, it seemed good. Hope that's the case when finished.

    Today I brewed a smash IPA. Grain was 12lbs of pilsner. During mash and boil the wort had a very thick foam almost meringue like. I used the same procedure for this beer as all the other beers I've brewed but have never seen this.I've attached a couple pictures. Any thoughts on what caused this?

    Dont It is pretty amazing how small the lid not being sealed all the way or a small crack that will let the CO2 out and not through the airlock. I have thought the lid was sealed but when I really leaned on it found out it wasn't all the way locked on.

    When I fermented in similar carboys with the narrow neck and the wort came close to the top, I always used a blow off tube. I felt there just wasn't enough room for the carboy to contain it without creating too much pressure. I learned this from blown corks. Now there's a fun mess to clean up.

    First time brew

    If you like darker beers, a brown ale is a good first choice. Not a lot of hops and is not as sensitive to some mild mistakes and light off flavors as a light beer.
