    PH drift, Atc and Such

    So if the ph drift from mash temp to calibration temp is .2 - .35, what would it be from boil temp to calibration temp? And if all ph readings are done at room (calibration) temp why are there all these other ph #s out there? (Say at mash temp)(confusing rant) What is the method to figure drift...

    sparge buffering

    Ok so I know just enough about water chemistry to be dangerous, but will adding calcium and or magnesium to sparge water help to buffer the ph down (or to help resist a rise in ph) during a sparge? Using ro water for mash and sparge.

    Clean Fermentation

    Will fermenting at cooler temps for a given strain say 001 or 002 possibly ferment so clean you could tast the water or the mineral in the water? Possibly causing a harshness at the back of the throat?

    Overpitching vs hops

    Is it possible that to high of pitching rate could cause a serious lack of hop flavor? I seem to have an issue with my hoppy beers and very little hop flavor after ferment and in the finished product.

    Does anyone know what using a Refractometer with fluorescent light will do? Everyone says to use natural light only and especially NOT fluorescent light!

    direct fire rims temp

    To anyone out there running a direct fire rims. Do you overshoot your target mash temp to maintain you target in the tun?

    Figuring mash temp by attenuation

    Has anyone tried to figure out their "real" mash temp by percent attenuation? I know one would have to use a no crystal recipe to calibrate, but it sounds possible.
