    I second that.

Hah, that's nothin'! My tap water source sodium is 286! And yes, I use RO water and adjust it, as all the other values are huge as well.

Yeast starter - Airlock or foil?

It's not about contamination. With a starter you also want to protect against contamination by having some kind of cover that won't allow dust particles, etc. to get in. That's how bacteria or wild yeast can be transported. Another threat is fruit flies as they carry the very potent...

Yeast starter - Airlock or foil?

Umm, actually, I did. ;) Me: "So how about an empty 3 piece airlock? That would seem to satisfy all the desired criteria." https://www.homebrewtalk.com/f163/yeast-starter-airlock-foil-155763/index2.html#post4330362 I agree that it's puzzling why more haven't come to that conclusion. I...

    EZ Water Calculator 3.0

You can downlowad v3.0.2 and look at the Version Information tab to see the revision remarks for what was done at each revision. That said, here's the info from that tab for those revisions (nothing substantial; although -TH- might beg to differ about that re: the donation button! ;) )...

    Lager starter Qs

Or you can decant it totally and then add some newly brewed wort and swirl it around and pour the whole thing into the fermenter. That's what I do. Just don't like the idea of that nasty starter wort in my fermenter. It may be irrational, but what can I say? :)

    Lagering with a swamp cooler

Sure, I do it. Although I guess the jury's still out on my success as my first is still carbing in bottles. :D As long as you're able to monitor it often enough to keep the temp within the tight range desired, then it works great. It helps a whole lot if you can use a cooler or other well...

First Brew; Not getting warm fuzzies...

Hey, no problem. I'm just pointing out that you don't need to buy one, as it's often stated (especially by those selling them, of course). There are many things that get touted, and then bought by beginners, that just aren't necessary. Many would like to know before wasting money. But I do...

First Brew; Not getting warm fuzzies...

I bolded the above. Don't waste your money buying a wine thief or whatever. Just use a cup of some sort, well sanitized, of course, and take about 5 oz out of the fermenter (unless you've got a really big hydrometer jar/tube, then more), being careful not to touch the wort with anything not...

Melted my 2 gallon cooler mashtun today.....

Sure, that could work. But I would NOT want to be in that house during that cleaning! (It's bad enough normally, with just food stuff) Nothing like burning plastic aroma wafting through the house. Personally I wouldn't do it. Not worth all the toxins you'd be creating while doing it.

    cascade recipe?

According to their website they bitter with Magnum & Perle, and "finish" with Cascade. FWIW http://www.sierranevada.com/beer/year-round/pale-ale I don't know how much different it would be using Cascade all around, but I'm sure it would be good!

    Cold Crashing????

It's going to depend a lot on the temperature they're at during carbonation. I've just done it a couple of times recently but it's taken 3-4 weeks with the house at 67 deg (and colder at night). In the summer it should be significantly faster with my house temp up around 74 or so. I've...

    Use HLT as bottling bucket?

I see no problem with using the cooler/HLT as a bottling bucket. Storing your gear in there has risks. But you could mitigate that by using some kind of thick bag to protect from scratching. Maybe canvas, or something similar. Of course that would reduce the storage capacity somewhat...

    To much damn wind!

This is a good idea; and a whole lot simpler than making a big wind break of some kind. Hadn't occurred to me. Thanks guys.

    Yeast starts vs not

And show me the Wyeast pack that actually has 100 billion viable cells in it (other than right off the line) and I'll be surprised (to put it lightly). The fact that they don't recognize a loss of viability for most (dare I say, all?) retail customers is rather specious, IMO. Somebody...

    10 months in the fermenter

LOL Yeah, that exceeds the normal recommendations; by about 9.5 months or so! One thing for sure, it's got to have an interesting taste.

Does anyone else stir the boil?

And, of course, you're not going to get any bittering unless some hops are boiled. This doesn't make sense, unless we're misunderstanding his comment. Hixyhopper - Would you like to clarify?

Bananas Foster Creamy Ale (All Grain) **pic intensive**

Well, yeah, that's a consideration. But the point is that you need to take into account the particular circumstances and make a judgment; rather than use a rule blindly. Some people will put some CO2 into the headspace to mitigate that problem too. Easy to do, especially if you keg.
