    Do you soak the gelatin first? The instructions on mine say to soak in cold water for an hour and then add boiling water directly to it to dissolve the gelatin.     Lager infection?

    The starter was about 2 litres, but I just shook the bucket to add oxygen. I did open the bucket a couple of times, I thought I sanitized everything very well but there's always a chance of screwing something up. Guess I'll have to try again. Thanks for the help.

    if you're transferring to a secondary, fermentation should be complete before transfer. Using a secondary is for clearing and/or dry hopping prior to keg or bottling and not for fermenting.     Thanks for the advice. I know the keg is not frozen because of the consistency of the beer (I've had that happen before!). The recipe is close to an ESB, so additional particles being suspended could make a lot of sense. Either way, this beer is delicious and this is the best hobby I've ever...
