    You might try the Lallemand CBC-1. That's supposed to be able to re-ferment to 12-14%. I haven't tried it that high yet, but I have successfully used it for carbonating pseudo-cask-style in kegs. Sent from my iPhone using Home Brew

    Good Hops to stockpile/always have on hand?

    It sounds like my preferred styles are similar to yours and Yoopers. :rockin: I don't buy in the bulk Yooper does, but I always make sure I have Cascade and Citra on hand. I love me some Citra in a saison.

    For me, the go-to for saisons is the Wyeast 3711. Less fussy in fermentation, and great results.

    WLP644 -Brett B Trois

    I'm curious, how long did you leave it in the fermentor before bottling? I recently added some 644 to a saison thatdidn't dry out the way I planned, and I am wondering if I should let it bulk-age in the fermentor for a while, as with sours? Thanks.

    My 7-yr old boy and I use "mashing in" as an in-joke between us. Drives my wife nuts. She knows what it really means, but not what we're using it to mean. :mug:

    Brett finished Motueka Biere de Mars

    I like Motueka, although I have never tried it in a brett. I have used it in saisons, usually with citra as well. I find it works very well if you are trying for a fruity saison. Hmm, now you've given me some ideas for another saison with brett-c recipe, with Motueka and citra... :ban:

    First-time Brett help

    Many thanks for all of the feedback -- looks like I'll bottle it with the added champagne yeast. I had planned on calling it "Saisonodon," (my 7yr old's idea), but I might just have to go with the "Demented Dubel" after all. :mug:

    First-time Brett help

    It's a strange one, alright. I had added cascade and citra, as the original experiment was to try out a saison yeast with those hops. There's a very fruity flavor to it now, almost like a demented dubel.. I'm guessing that mostly comes from the Brett C. A little funk, but not much.
