    Dual Spires Black Lodge Ale

Some folks advocate adding half of the sorghum at flameout as a way of reducing the twang. You could sub rice syrup for the some or all the sorghum, but the rice syrup is pretty light and doesn't come as close as the sorghum does in mimmicking "real" LME. I also believe some brews are better...

    Spaced Rasberry Beer

I finally cracked a few bottles of this beer over the weekend and IMO it is probably the best batch of gluten free beer I have brewed in the past year of GF brewing. This is the first GF recipe that I would rebrew with no changes, AND that does not rate a "for a gluten free beer" disclaimer...

04 will be fine; let us know how it goes.

    Dual Spires Black Lodge Ale

For the Dual Spires, here's how my boil went: - Bring 4-5 gallons of water to a boil (been doing 4 gallon boils lately, then topping off to 5 gallons in the primary) - Remove from heat and add all 45 minute additions EXCEPT the hops - Return to heat, stir it up, bring it back to a boil, then add...

    Head Retention in GF beers

Can you post your recipe; it may help?

    Dual Spires Black Lodge Ale

Wow; that's great to hear. I have high hopes for the rasberry ale I've got in my primary right now (no rasberries in it yet...), although I did screw up on brew day. After I chilled the wort and poured it into the fermenter, I ended up having to scrape a bunch of sorghum off the bottom of the...

    Black Hops GF American IPA

IMO, the malt base and the hopping are a very good match. I will be enjoying many more of these over Christmas week; I'll report back in.

    Black Hops GF American IPA

Had "a few" of these this past weekend; my tasting notes are... yummy. For my tastes, in terms of overall bitterness the hopping schedule was good, maybe Simcoe at the end too? Next time I will dry hop (like a boss) for more aroma. Malt base is delicious; love that D-180, but with all the...

    Spaced Rasberry Beer

Thanks for the feedback; I'm in. I'll let you know how it goes. What would you think of using something like this in lieu of the frozen rasberries?

    Spaced Rasberry Beer

Spaced, Saw your Rasberry Beer on your blog and would like to give it a go. Here is my take (5 gallon boil/batch): 3.0lbs Sorghum Syrup @ 60 minutes 6.0oz Maltodextrine @ 60 minutes 0.5oz Hallertau Hops @ 60 minutes 0.5oz Tettnang Hops @ 30 minutes 0.5tsp Yeast nutrient @ 15 minutes...

    Black Hops GF American IPA

I was surprised nobody had asked sooner. The beer I brew is drank almost exclusively by me. While I am gluten sensitive, I do occasionally go non-GF.

    Black Hops GF American IPA

Believe I did a 4 gallon boil and then topped it up to 5 in the primary. Then again, it could have been a full 5 gallon boil... guess I need to improve my brew day note taking. What kind of beer does your fiance like? May want to start with something a little more mellow? Then again, if...

    Black Hops GF American IPA

Oops, sorry about that. I used Fermentis SafAle S-04 (in the blue package).

    Black Hops GF American IPA

Finally bottled this batch today; looks like it'll be ready just in time for Christmas. I also finally got around to a final gravity reading. It fermented out to 1.013 which puts the ABV at 7.7% (I edited my original post to reflect) which is a little higher than anticipated; this could be a...

    Gluten Free Beer not carbonating

Dumb question; you did add bottling sugar (corn sugar, honey, etc.) to the bottling bucket on bottling day?

    Black Hops GF American IPA

I wanted a hoppier, higher gravity version of the Dual Spires Black Lodge Ale, so here's what I came up with. It's currently in the secondary, plan to bottle this weekend. 5 gallon batch: 60 - 3lbs rice syrup, 3lbs sorghum syrup, 1lb D-180 candi syrup, 8oz blackstrap molasses, 8oz...

    Imperial IPA - 3rd Brew

In terms of the fermentables, I agree with mloster on the buckwheat honey and the sorghum (or at least a portion of the fermentables) at flame out. I put your recipe into BrewTarget and as for the hop additions, 2oz of Bravo at 60 minutes puts the IBUs thru the roof, especially if you decide to...

    Dual Spires Black Lodge Ale

"3.3 lbs a piece"... that makes more sense. I wasn't sure about the extracts thing; I'm just not that gutsy. In a previous post you had mentioned a FG 1.010; would adding the extracts to the seconadary have brought it back up like that?
