    Yeast??

    I'm pretty sure brewer's yeast is called such because it can ferment maltose, which is a major portion of the fermentable sugars in wort. I don't think wine yeast has the same capability.

    Great find, thanks for posting this! The paint strainer bags are a real stretch to get on my 10g pot, and definitely don't fill out the sides. Do you think doubling up would provide better filtering? Are you ending up with much extra trub from this? Pants look like Cartman or Spongebob.

    Not sure what ESB malt is, but I created a recipe with 8# 2 row, the other malts listed, 72% efficiency, and a 149* mash temp to hit the SG and FG numbers you listed. Beersmith calculates that at a 6.5% ABV... not sure where our numbers differ. Since you don't have IBU or a hopping schedule...

    Topping up late...

    Here was my original recipe. I dropped the 2 row to 9lbs, and we had fairly low efficiency (new grain mill), so I added 1lb of extra light dme halfway through the boil. I reworked my hop schedule to be balanced at 1.049 (35 IBU).

    I brewed a concentrated batch, intending to top up to 5 gallons in the fermenter. I ended up boiling off more than expected, and didn't have enough water left - I have 4.25 gals of 1.053 SG beer sitting in the fermenter now.
