    Banana Saison

    So I am looking to do modify my saison recipe to give it a banana taste to it. I am debating between 1) mixing a saison and a wheat strain and holding it near 80 2)adding bananas to the mash or fermenter 3) using a different strain which will get be the saison taste with more banana. Any thoughts?

    Yet another is my beer ruined thread

    So about a month ago I brewed a dead guy clone and used wyeast 1007. I have had it in my basement around 60 F and was going to keg it today. I attached a picture but the stuff on top is greenish brown and is only a thin layer. Is this an infection or just a really slow ferment? Either way...
