    Here it is! Kansas Beer, Shawnee Midnight Ale. Smell and taste amazing. mild coffee taste, not to hoppy, perfect amount of bitterness. Still a green, about 12 days left until refrigerate. Had to taste one.. lol

    My bews so far...

    Question about my New batch..

    So I have a new batch of White House Honey Ale in the fermenter. The instructions say to ferment for 2 to 3 weeks then transfer to a secondary for another 2 to 3 weeks for conditioning. Is the secondary necessary?

    Bottleing is done...

    That was a mission, but fun. My kit says let the bottles sit in an area of about 72 degrees for 9 days, then in 60 to 55 degrees for two weeks before refrigerating. Can somebody explain to be why this needs to happen for my knowledge as the instructions dosnt really give a good explanation. :mug:
