So, I forgot to grab bitter orange peel from my LHBS, and I'm brewing in the morning and don't want to drive the 30 min back to the supply store. Thinking I would just substitute some fresh orange/grapefruit zest.....wondering if anyone has any ideas for the amount? It's a 5-gallon batch, I was thinking a couple ounces would be sufficient, any thoughts?
 
for my spiced christmas brown i used the zest of 2 oranges at 20min left in the boil
 
Bitter orange peel is very different from fresh orange zest. Your beer will not be the same as the recipe. However, you may like it better that way. Don't be too afraid to change a recipe a bit. Beers are quite flexible in that regard.
