Is this DIPA too ridiculous? A full pound of cascade!

OG: 1.101
FG: 1.021
ABV: 10.5%
SRM: 8.9
Batch Size: 5.5 gallons
Efficiency: 75%
Style: 14C Imperial IPA

Malts:
19lbs Rahr 2-Row
1lb C40

Sugars:
1.75lb Dextrose

Hops:
1oz 16% Apollo 60min 39 IBU
2oz 5.5% Cascade 20min 16 IBU
3oz 5.5% Cascade 10min 15 IBU
4oz 5.5% Cascade 5min 10 IBU
3oz 5.5% Cascade 0min 0 IBU (20 min whirlpool)

Additions:
Whirlfloc

Yeast:
WLP090 Super San Diego

Mash:
75min at 150-152
Mashout at 168-170

I'm thinking that iBrewMaster isn't calculating the long low mash or the dextrose addition into its calculations for the FG. All that plus the WLP090 should give me 1.013-1.016 in my experience and research.

Forgot to mention the dry hop additions.


2oz each of cascade, one in secondary at five days and the second in the keg.
 
1.101? Might be a little high for my preferences...Imperial IPA high range is 1.09 for BJCP

Other than that should be fine...all that cascade should make a nice beer...wonder if enough initial bitterness is there
 
I would probably bump up the Apollo to somewhere between 1.5 and 2 oz. You've got a big beer there, it can handle the high IBU load.
 
Well, with corrected AA% numbers for what I have, the original recipe is 93 IBU, with Apollo at 1.5oz, 119, and with 2oz, 142.
 
I have one very similar carbonating right now. Used 10oz of cascade in the boil and 6oz in dry hop additions. Mine came in at 1.087. Grain bill is similar except I used only 8oz C10. I did 2oz of warrior (17%AA) at 60min. I'd probably use 3oz if not 4oz next time do this again. It's bitter but just not quite bitter enough to balance the boozy-ness of it (10%+ abv).

I used WL001, 1L starter stepped up to 2L. Fermented down to 1.010.

Hope you like Cascade, cause that's what it tastes like.
 
Hmm. That makes sense. How about a 1oz FWH and up the 60 to a 2oz?

12oz Dextrose (added during first runnings)

Hops:
Apollo 17.8% 1oz FWH 28 IBU
Apollo 17.8% 1.5oz 60min 69 IBU
Cascade 6% 2oz 20min 19 IBU
Cascade 6% 3oz 10min 17 IBU
Cascade 6% 4oz 5min 13 IBU
Cascade 6% 3oz 0min 0 IBU (20min steep at 180)

Dry Hop:
Cascade 5 days 2oz Secondary
Cascade 2oz in keg (life of keg)

Additions:
Whirlfloc 15min
Gelatin in keg

Yeast:
Washed and cultured WLP090

Fermentation:
Primary 10 days 66deg
Secondary 5 days 70 deg
Bright 1 day 38 deg
Keg: force carb at 20 psi for two days, drop to 15 for 5 days, then serve.
 
Looks great, how do you like WLP090 compared to 001 in an IPA? I havne't had much experience with it.
 
That looks like a tasty recipe. I might just have to brew it up one of these days and try it.
