Hornindal Kveik is blowing my mind

I recently brewed a hoppy pale ale with cascade, simcoe (cryo and pellets) and citra (cryo) and my magnetic stirrer had just broken, so I just went ahead and used 1 tsp of a 4 months old fridge-stored slurry of Hornindal. I was a little sceptic when I pitched it, but it was awesome fermented at...

Omnipollo “4:21 DOUBLE RASPBERRY/VANILLA SMOOTHIE IPA

Sorry, my bad. I meant lactose, not dextrose. I misread. Embarrassing :)

    NE IPA without Citra Hops?

Nelson/Mosaic/Simcoe in equal amounts works great as well! Or just Nelson/Mosaic.

Omnipollo “4:21 DOUBLE RASPBERRY/VANILLA SMOOTHIE IPA

The dextrose is listed as an ingredient. I guess that's the "milk"-part in milkshake. Omnipollo uses dextrose in a lot of things, and in their range of Milkshakes it really adds to the flavour, so I wouldn't leave it out. EDIT: I misread "Dextrose" as "Lactose". That's why this reply is so...

American IPA Trilium Melcher Street Clone

Thanks for the reassurance! Looking forward to another sample in a couple of days.

American IPA Trilium Melcher Street Clone

I just kegged this the other day and took a sample today. At this point it's so harsh that it's undrinkable. Do you guys know if this will mellow? Perhaps it's the yeast that hasn't really finished up yet, or something? I followed the 7-day procedure I saw in this thread and everything went...

    Lactose in an IPA?

I've had some IPAs with lactose added, mainly from Omnipollo and in combination with various fruits and/or berries, and it worked much better than I would ever imagine. They also have a collab with Tired Hands named Milkshake IPA which also includes lactose, but I haven't tried that out yet.

    Post your infection

I don't own a carboy, only buckets, but I will try and get my hands on one tomorrow! Thanks for the heads up!

    Post your infection

Thanks for the replies everyone! I'm fairly certain that the fermentation was off when I transferred it, but perhaps the yeast was roused and kicked off fermentation again or something, but I suspect this is infected. I followed the same procedure that I usually do regarding sanitation...

    Post your infection

I hope you're right! I've never really had any of my beers look like that in the secondary before, but then I have never used WLP715 before. I forgot to mention in the earlier post that the airlock had been quiet for about a week but started bubbling again this morning as well.

    Post your infection

Seems like I've got my first infection ever on my hands. This just as I was going to pitch brett into the secondary of this batch. Is it possible to still pitch brett in this or should this just go straight in the drain? It smells of overripe apples at the moment. It's primary fermented...

American Pale Ale Tired Hands HopHands Clone

Recently brewed this with Mosaic instead of Simcoe. OG was 1.050 and it finished a bit low at 1.009, and it smelled like tropical juice when I took the final hydro sample. Looking forward to try this carbed and chilled! I love the simplicity of the grain bill. I've been cutting back a lot on...

    Saison Cottage House Saison

Around 2 weeks after bottling it tastes great! But I made a starter that was too big and/or didn't ferment it hot enough, because it's not as spicy and funky as I thought it would be, more subtle and crisp, but it's still really really good! Thanks for the recipe! Will be making another...

American Pale Ale Russian River Row 2 Hill 56 Clone

This was pretty good. Might try it again sometime with some other hops. Switched the Crystal 20 for CaraRed, and added some hops around 15 minutes. Looks a little darker than it really is. Oh, and of course – a big thanks for the recipe!
