    didnt understand the "dont switch SSR's with electromechanical relays"... I'm not planning on doing that. by redundancy above i meant, if i fry an element SSR, i can use a pump SSR in it's place. i don't have any electromechanical relays, just the pi, switches (controlling the contactors)...

    when it's pretty cheap to get a stainless container of the same size, i see no point to boiling/heating in plastic. fermenting, on the other hand... i do all the time in plastic.

    I sourced some triclamp elements from china- the element itself seems to be folded/crimped a bit tightly so it's in contact with itself in one area... Before I try to bend them apart a bit, does this even matter?

    Two elements one PID?

    it would probably be a lot easier to just run the mash element to get to mash in temp, power down the controller, unplug the mash element (or from the element) and plug into the sparge element. like you said you'd have to move the thermocouple as well, or wire two to a on-off-on switch.
