I had one tonight. I definitely picked up some very slight roasted/coffee notes in there on the back end, beyond the candi sugar/plum dominance. I had a Westy last year and I think I like this more. It seems more complex. Would love to find a good recipe for this.

Have you tried dry hopping before end of fermentation? I think doing that would help with both hop saturation/flavor as well as haze. I think the standard practice is high krausen. I use pretty much the original recipe in this thread and get great haze and flavor.

If the other keg you were sealing was full to the brim, it's very likely that was the cause. I have had that happen when overfilling a keg and going through purging cycles to clear the headspace.
What yeast did you use? I always use Wyeast 3068 (Weihenstephaner) and Beersmith always gives me an expected FG of 1.016 but mine always goes lower, more like 1.010. I would say you are safe to bottle though.
