American Wheat Beer American Wheat Beer - 2nd place Best of show - 2011 HBT BJCP competition

Brewed and kegged. OG and FG were pretty much spot on. Used Wyeast 1007 German Ale. Definitely has a citrusy flavor to it, a little bitter. More 'yeasty' than the Kolsch yeast probably would have been. Someone mentioned similarities to sumpin sumpin early on in this thread, hopefully I can...

    Man, I love Apfelwein

First batch, 5 weeks in and syphoning into the keg, only one word comes to mind at first sip, omigodthis****tastesamazing! Dumped another 5 gal and a couple lbs of honey on top of the yeast cake for round two.

    Double IPA Tits-Up Imperial IPA (3-Time Medalist - 2 Golds, 1 Silver)

Brewed this last night - 1.082 on the nose. Made some minor adjustments in hop addition times to nail the ~100 IBU mark. This is the first time I've dealt with 20+ lbs of grain ...wow. Also went with 6-6.5 gal into the primary (blow off tube definitely in place). Can't wait!

American Wheat Beer Summer Citrus Wheat

Mine was quite dark as well, much darker than expected for a wheat. OG was dead on. I'll be bottling this in the next few days, can't wait for a taste! Fermenting time was very short for this brew, but extremely vigorous for the first couple days. I used 0.5oz sweet orange peel instead of .25...

California Common California Common (Anchor Steam Clone) Extract and AG

Good stuff. Brewed AG version yesterday, OG = 1.050. The mash schedule is spot on, I didn't have to tweak anything regarding H2O temp. I saved 1.2 quarts for kraeusening (first attempt at both spelling and technique). I will probably lager in the bottle cause I only have one carboy, and lots...

California Common California Common (Anchor Steam Clone) Extract and AG

I was thinking the fridge for a lagering stage. It would be nice to result in some lager characteristics. So here's kind of a noob question: After I ferment in the primary for a week (~63F) and rack to a secondary for two weeks (~63F), can I lager the without a keg set up? Can you lager in...

American Wheat Beer Summer Citrus Wheat

Dude, Wy 1010 is a sulphur fart bomb! Caught me off gaurd (first wheat brew), and freaked out the roommates for sure.

California Common California Common (Anchor Steam Clone) Extract and AG

Will be brewing this tomorrow, can't wait! There are at least a couple of success stories in this thread regarding higher fermentation temperatures. For primary and secondary mine will be between 63 - 72, depending on the weather (no T control). I do have a mini fridge I can ferment in, but...

Specialty IPA: Red IPA India Red Ale

I'm definitely going to go for it, with all Simcoe, this weekend. Yeah, can't wait any longer. My yeast starter will be a bit off as well - only have dark LME on hand (may alter the flavor just a tad). The original recipe will be brewed in due time, the more hoppy red beers in my fridge the...

Specialty IPA: Red IPA India Red Ale

Seems everyone is sold out of Amarillo. The outstanding reviews of this beer make me want to try the original recipe. I think I'll hold out for Amarillo, if I can find it. If not I'm sure the all Simcoe version will be tasty!
