As long as you pitched enough healthy yeast and you are in the proper temps you should be fine. Just let it play out. If you're really worried I'm sure you can take a hydrometer reading in a few days and make sure there's something going on.
Since I started making starters I've always used White Labs so no smacking involved. If I remember correctly, when I used Wyeast I would smack 4-6 hours prior to pitching.
As for the starter, I always get that going 2 days before brewing.
I've bottled with 750's many times before I moved on to kegging. The only problem I ever ran into was a bottle with a bottle from the Bruery where the mouth is larger then normal 750's. Just check the caps prior.
