how long can you leave beer in a bucket fermenter

Why would you open ferment in the first place?

    possible infection

I have a beer bottled for 14 days, fat tire clone. I checked at 7 days (as I always do) and it didn't seemed carbonated at all. I didn't really think much about it and let it sit another 7 days. So today was day 14. Normally all my beers are all the way carbonated or damn close. This was...

    Stopper pops out of carboy

Buy some quality paper towels for this, they won't fall apart as easily. I do what other have said. Wipe down the carboy neck and stopper with paper towel and you will be fine.

    Carb after 7 days

So i bottled my first batch 7 days ago and couldn't wait and opened one last night. Good carb and good head but still a touch green. I have been reading 2-3 weeks to bottle condition. Is it normal to be carb'd after only 7 days?

    Taste testing before secondary

So I tasted before bottling and it tasted pretty darn good for a warm not carbonated beer. It was different than after primary. I also took a Coors and let it warm and lose carbonation to have a comparison. Thanks for the advice, now we wait 3 weeks.

So would you say it is pretty common for a 1st timer to not have the experience to really judge the warm/not carbonated beer after primary?

    Taste testing before secondary

I was hesitant to ask this question but what the hell. When I racked to my secondary I obviously pulled a sample for a gravity check. I had a sanitized glass measuring cup. After testing the gravity I said "what the hell I'll taste it". It tasted hoppy but with it being warm and not...

Fermentation can take 24 to 72 hrs to show visible signs.

So here is my Lagunitas IPA clone in the secondary dry hopping. It was in primary for 10 days and now has been in secondary for 5. I am thinking about bottling tonight. The gravity readings in primary said it was done fermenting. I went with secondary to dry hop. The bubbles are just Co2...

Ok good, I kind of figured but I got nervous. I want to dry hop but I might do it in the primary and skip the secondary since this is my first rodeo.

I have my first attempt at a home brew (an IPA) in the basement right now in primary, has been there since last Friday. The temp on the bucket is registering 68 to 70 F. Is that ok? I checked today and saw no visible signs of bubbles from the airlock. Previously there were signs of bubbles...
