Peat Malt is malt that is smoked using peat as an agent for roasting the malted grain. It gives it a smokey flavor. You could include it in your boil and it would impart a smokey flavorer to your beer. A good example of how the peat malt tastes is in its use in Grant's Perfect Porter.
I'm not usually crazy about wheat beers but I am looking for a Widmere Hefe clone. I like the flavor and color. In my opinion it is the best hefe and I would mind doing a batch or two for summer. Any recipies out there?
This is a little late for this problem but if I was sure my beer had an infection and but it was still drinkable I would consider pasturizing it in a hot water bath to kill the bacteria or wild yeast. I think if you brought the temperature up slowly and made sure there wasn't too much pressure...

I live in Eastern Washington and like most people from this area. I like a hoppy IPA. Two weeks ago I brewed a nice IPA and even dry hopped it but wasn't quite satisfied with the hoppieness. Any real hoppy IPA recipies out there?
This is my first post, hi all. I have a very old capper and works exceeding well. When I give out samples there in 12 oz bottles and I continue to refill my 22 oz and have never had a problem.
