Right on, I received a confirmation email for my 835 order, and my card was charged. However, I never heard anything further regarding when it is going to be shipped.
I think that 3711 is a great starter saison yeast. The mouth feel that 3711 kicks out is great. The profile isn't as dynamic as other saison for sure. But, it's consistent and attenuates very well.
The only O-fest I've done was with East Coast Yeast Munich Fest yeast. It turned out awesome and wish I would have washed that yeast. Having said that you can't loose with german lager yeast. :)
I've bought 4 strains from them and only one wasn't up to snuff. The Kolsch and Munichfest are freaking awesome! The Flanders ale culture was pretty good as well. However, the BugFarm #1 I bought a year or so ago was a total dud.
For yeast I've harvested from commercial bottles I went 3 and probably should have done 1. The normal yeast I've never gone more than 5 generations. I usually wash Private Collection Belgian yeast. They really get going around generation 3, then I let them go usually.
Agree with most opinions in this thread. Go with White Labs Kolsch and bump down the wheat to about 10%. I think your IBU's are good but bump up your boil hop addition to equal that amount. Personally, I like fermenting in the low 60's but that's my thing. Good luck!
I have used ECY Kolsch once. I fermented at about 66 and it turned out well. IMO, the yeast let more of the pils malt come through then the WL 029 that I have used in the past. I am curious to see how the ECY strain would do at 60, which is where I brewed my previous Kolsch's using WL 029. I'm...
