    Thanks for the reply@shelly_belly I cut into it today after almost 3 months. Tastes great! Soft inside, the mold is controlled. Here are some pictures. And of my Tilsit #2 I made yesterday.

    On day 13 of my first Tilsit. Smells divinely stinky but not sure about the green mold. I was washing it with b. Linens, salt, h2o solution until tonight. Now just the light saline wash every few days. Does anyone know if I should just leave the green or brush/pick it off?
