at the end of my boil I do a whirlpool while it flows thru my counter flow chiller and all the hops and trub settles at the middle of my kettle since I have a trub dam at the exit of my kettle.

I have a SS brewtech 2v myself and the powercord is 1ft long from the controller also you need a GFCI breaker on that 240V line. And also a GFCI won't work with your drier so I suggest you run another 30amp 240 dedicated line for your electric hombrewing needs.
Same here I have a 20 gallon 2 v system. I get up to 212 on a 12 gallon boil, then I usually decrease the %element on and continue to boil at 210.5-210.6 and I also get the same humming sound from the element and controller.
It doesn't matter how big the batch size. I have added it to a 10 gallon all grain imperial stout. I also used 3lbs of plain light dry malt extract and it gave my beer a more toasty malt flavor.
I have a SS Brewtech glycol chiller that is less than a year old purchased new, now it it leaking some type of mineral oil from the top of the LCD screen that tells you the temperature, on off switch. I don't think it is coming from the compressor. Anyone have this issue?
1. Did you sparge your grain bed aka rinse with 170degree water until you reached 7gallons pre boil run off?
2. If your flavor is light bodied that means you didn't get enough starch to fermentable sugar conversion.
I have added just a teaspoon of vanilla extract to a chocolate imperial stout once in a 5 gallon keg and the flavor was overpowering at that amount. I would suggest vanilla beans without the seeds or brewers best vanilla flavoring one container will do 5 gallons.
