    Stout grain list - what hops should I use?

    Recently I used cascade. It has a lower AA but I used enough to bitter to about 60 IBU. My thought behind it was as I looked at recipes a lot were leaning towards English hop varieties and cascade is a daughter of fuggles and I was wanting an American stout so I wanted American hops.

    In my experience using a malt like Crystal 60 turns my IPA/APA into an amber ale while waiting for bottle conditioning.

    I would be concerned with that high of a lovibond crystal malt reducing the hop aroma/flavor while waiting for carbonation.

    Maybe find a way to combine the 40 and 30 min adjustment. Seems redundant and you could go with one bittering charge at either 30 or 40.

    I personally would try Idaho 7 and Centennial. Although it would be fun to experiment and try others as well to see what would work best!

    What size batches are you brewing? I also live in Chicago and I plan to use distilled water from now on and build my water based on the style rec from the brewfather software.

    I also recommend the big book of kombucha. Our first batch is fermenting now. Can’t wait to see how it turns out!
