    The pressure drops a lot when it gets cold. Don't worry about it. I keep mine at 12 psi but there is a little trial and error and tweeking depending on your guage. Don't turn it down to that pressure. Instead turn it down and then back up to pressure. Using keg lube on the o-rings, mine...

    Flat and sweet?

    They probably need a little more time at room temperature. Take them out of the 'fridge and let them sit at 70 degrees for a week or so and then see how they are. Three weeks at 70 is generally the minimum recomended.

    With mine, I turn it down to 5 and then turn it up to 12. Congrats on the new kegerator!

    We must have started about the same time. I am 30 minutes into the mash. I have already filled up a keg and a few bottles and I have my sparge water heating on the stove. After the boil starts I am going to sample a new keg.

    Can I fix it?

    You are right about the recommended temp for that yeast. It likes the 50's. I think you caught it early enough to not make that big of a difference. It looks really dark when you are looking at 5 gallons. It will look much lighter in color in your glass.

    When to bottle hefe?

    I let mine go for about four weeks. It is probably done after three weeks, but after four it will be clearer and better. Be patient, and brew some more.

    New To Brewing Capper Questions

    That is what I have. You just slide it down until it hits the cap and pull the lever. It adjusts automatically to any size bottle. I love it!
