    How many buckets can you fit in your Transam? :D I don't know exactly how much grain there actually is, but... maybe $200 for all of it? Honestly, getting it gone is far more important to me right now than the cash, although that would be helpful too.

    I usually smoke my chucks to 195F. If I'm doing burnt ends, I take them off a little early at 190 and cube it, more rub, some sauce, and back on.

    I need a temp controller

    You can always use an stc-1000 to trigger a relay rated for the load you need. SSRs are super cheap and reliable for this type of application.
