    Does anyone not use a blow off tube?

    It was always necessary when using a carboy, especially one too small. I've been using buckets and the blowoff tube seems quite unnecessary these days.

    Watch out for STC-1000 knock-offs

    I recently also purchased a crappy one output temp control stc-1000 ripoff. The first thing was that was fishy is that it read in Fahrenheit. It would be fine for an indoor DIY keezer thats about it. I complained and got the thing for $10 which is easier than sending it back to China.

    What's in your fermenter(s)?

    5 Gal. Mosaic White IPA dry hop underway 5 Gal. Mosaic White IPA fermenting with American Farmhouse yeast...not sure how long to keep it on the yeast cake....

    Yep give it time. What temp do you have it at? The cooler the longer it will take to start up, but once I starts keep it someplace temperature stabile in the 60s if possible and dark (basement).
