Can the OP verify if the Bru Gear has volume markings? If so, are they etched? I am torn between these two conicals and am having real trouble deciding which route to go. I like all of the features and sanitary valves of the Bru Gear, but I can get a 1/2 bbl SS Chronical for the same price...

I do this every time I brew, and I have had awesome luck with it. Good fermentations and really clear beers.

Yes, it is a Black IPA/CDA style. I believe it is all pale malt and carafa malt, with Centennials as the hop. So simple, but so delicious.

+1 on leaving out the roast. I would up your carafa amount, instead. I believe Stone Sublimely Self Righteous uses only pale and carafa malt and all centennial hops.

Well AFTER I made this beer, I read that 3944 takes an unusually long time to ferment out. Still, you'd think a big starter on a lower OG beer would produce a little faster result.

I brewed a belgian wit with Wyeast# 3944 Belgian Witbier yeast on 7/2, the OG was 1.041. I pitched a half gallon starter and it took off like gangbusters within a few hours. Well it has been over a week and it is STILL fermenting. I checked the gravity a couple days ago and it was only at 1.021...

I am using the Bell's Two Hearted grain bill, so it should be a nice base. I definitely want those citrusy/piney hops to be the focus, but I want it to be balanced too.
