    I have not tried the beer kits, but the cider kits are pretty good IMHO.

    Cider Clearing?

    your cider is fine, completely normal. this is just me, but as my ciders and beers are clearing, I give the carboy a couple of good, firm twists back and forth to break the sediment clinging to the side of the carboy. not necessary, I'm just neurotic.

    Pressure-Fermented Lager: Necessary to Pitch Cold?

    edited to be more specific: I always do a liquid yeast starter at room temp on a stir plate, then I pitch at room temp, and then add CO2 to 10psi to my pressure fermentation vessle, and let it go. never gets below 68 degrees, and for me it tastes fine.

    that would work for sure. Lots of different ways to tackle this for sure. I would aim to skip the bottling bucket all together, but the bottling bucket would work. I love my pressure fermentation vessle. Makes good lagers at room temp.
