    What do your beers usually do during this time? I wouldn't worry, set the whole thing in the tub if its really that big of a beer or an unfamiliar yeast strain.

    I agree with everyone here. Start with what you like and go from there. The sky is the limit! But don't expect every experiment to be good. And do not try a 100% specialty grain mash... it will not be 100% specially good ... trust me lol. And use habaneros sparingly... Beer smith is great...

    This has worked for me. Add it to your resume somewhere. "Scaling, manipulating and perfecting sensitive recipes" "Cleaning, sanitizing and proper storage of specialized equipment" Landed me a comfy lab tech job. That was about half of the interview.

    Very true. I have decided not to cut already, started putting it back together. I bottle condition almost always, now I've built a dandy 3 tap chalkboard keezer and I am learning the ropes. Although if someone has had a failed/successful experiment with this I would love to hear.

    Do You Brew if you are Sick?

    Ha, sounds like my boss! I have though been sick enough to do a really lousy job at work but still be able to brew just as good. I guess I just really enjoy brewing and that contributed to me feeling better. Some people experience sicknesses much worse than others, tho.
