Yes, It is for sure ok. People (including myself) keep scobys in a "scoby hotel" which for me is a sealed tuperware container. I keep it closed for weeks at a time, until I need to add more tea. The scoby's are completely viable and healthy after that period of time.

I haven't heard of adding culture to the 2nd fermentation container either. What will help is adding 1/2 teaspoon of sugar to each bottle (or add fruit) as extra food for the yeast to consume and make c02.
Also you shouldn't expect a carbonation similar to a c02 injection like they do for soda...

They have 3 different sized ones, but yours will most likely be the small.
Also there is a $20 minimum purchase amount for shopping online but if you give them a call you can puchase just the spigot over the phone.

Yeah, good point about the vinegar bottles. That crossed my mind as well.
But all those plastic spigots use a rubber gasket that is on the inside of the container which may be food grade as well and be safe for water but is that made to withstand an acidic liquid I wonder?
