    Worried

So gravity on this brew started at 1.066 and dropped to 1.007 after two weeks before I added the peach purée. Now two weeks later it is at 1.006. I’m thinking that the “yellowish” patches are yeast rafts, but the white is what concerns me. They are actually there and not reflections in the...

    Worried

So I have my peach saison that I am fermenting. I had planned on doing a simulated barrel aging with this batch (oak chips soaked in red wine). Opened it up a short while ago to add the chips and found this. It was brewed 4 weeks ago, and two weeks ago I added the amoretti peach purée. Just...

    NEIPA degradation solved????

It has now been 22 days since bottling. Carbonation is adequate although head retention is low. Week long refrigeration is darker and less hoppy. Shows more indication of degrading.

    NEIPA degradation solved????

No. The exact opposite. It is contradictory to what common wisdom says. I will also admit that carbonation is slightly lower then preferred, but still adequate, and by lower I mean that head retention is low.

    NEIPA degradation solved????

Yes. The one that was obviously lighter had more hop flavor and aroma. The darker one was much less flavorful. I will defer to the lil woman’s language here and say that the lighter one was more like grapefruit juice and the darker one was sweeter. My taste agreed although we used different...

    NEIPA degradation solved????

Just want someone to see what happens. Maybe someone will sacrifice a few beverages to see if they have similar results. If someone can show me proof of different results then I will accept that, but until then I am going to roll with what I have.

    NEIPA degradation solved????

I will not disagree that these are far from perfect examples. Not even close. This was an attempt. But why is there such a drastic difference in the two? Why do several bottles that were refrigerated for over a week have a dramatic difference from bottles that were refrigerated for only a few...

    NEIPA degradation solved????

I think that you are missing the “point/intent” of my post. All things being the “same” please explain the difference in the two glasses that I posted? The only known difference that I have to explain is refrigeration time. Please tell me that you do not see a difference, and I will be more...

    NEIPA degradation solved????

I am not going to say that oxidation is not possible. I am only trying to say that the only difference between to two beers pictured is time in the refrigerator. So why such a dramatic difference if oxygen is the issue? I want someone that has their own NEIPA going to conduct a similar...

    NEIPA degradation solved????

Ladies and gentlemen I may have inadvertently solved one of the greatest beer problems known to modern home brewers. This was not a scientific test, this was not conducted under controlled conditions, this was simply an observation and my conclusion. I want someone to verify the results and post...

Soaking Cacao nibs and vanilla in Whiskey

I did a stout and used 2oz cocoa nibs and about 2.5 oz of bourbon. This was a 5gal batch. I get a very good amount of cocoa flavor in it a slight bourbon NOTE. Nothing that can really be fingered if you’re not looking for it. Next time I will be increasing the bourbon to try to get a little more...

    Purging

I understand what you’re saying and it is definitely true that it all mixes. I guess I was over a analyzing things and got kind of wishful. Hoping that if I had enough under the right condition I would be able to do something beneficial. This is why I ask. You figure that someone else may have...

    Purging

So I am a younger brewer (less experienced) and I am going to be attempting my first NEIPA. From reading and attempting to learn I have seen that this is sometimes a very picky style. I have not jumped into kegging. I am planning on bottling this but have heard that oxidation is a potential...
