I agree - Canada's selection of craft beer sucks. I was in SK a few weeks ago and could not believe how poor the selection was.

Don't worry - everything is fine. I typically start getting fermentation within 3-4 hours after I pitch the yeast and it goes crazy for the first few days and then levels off. Remember - leave it in your primary for 2-3 weeks before you move to secondary or to bottling/kegging:mug:
My son and I are both homebrewers and we are always trading our beers back and forth, both for enjoyment but also to get good, constructive critisisim:mug:
I leave all my beer in the primary for 21 days and then go straight to bottling. I doubt whether fermentation is finished after only 7 days. For me, the bare minimum would be 14 days and ALWAYS check with a hydrometer for 2 to 3 days to be sure that fermantation is finished:)
Bought grain and had it crushed at LHBS on Oct 8. Too many things got in the way and did not brew until Dec 10. Bottled yesterday (Dec 31) and smelled and tasted great. OG 1.060 and FG 1.018. Ready to drink on Jan 21. Kept the grain in a Ziploc Bag in basement (65 degrees) Time will tell but...
I have the same issue of soupy yeast cake using US-05. I primary for 3 to 4 weeks then go straight to bottling. I, however do move the primary to the kitchen counter the night before I bottle. I sure would appreciate any info on how to get tighter yeast cakes.

A few words from a retired liquor store owner. Try Svedka Vodka. Here in CO it is priced with Smirnoff but will drink with Ketel or Absolut IMHO. Sold oceans of the stuff back in the day.
I brewed an Oatmeal Stout with OG 1.062. FG stalled at 1.020 after 3 weeks in the primary. I am drinking this now and is a great brewski. Don't worry -- you will be fine
I do extract brewing, making 2.5 gallon batches using a 5 gallon BK.
I lose about .75-1.0 gallon during the 60 minute boil. Which is the more preferred method:
Start with 2.5 gallon boil and boil down to 1.5 gallon and then top off back to 2.5 gallon (Will help bring temp down to pitching...
