Update. Beer is Fab after 14 weeks of aging as I just tapped second keg. Even better now. A guzzler type beer for those that like darker beers. Smooth and creamy and a beautiful color.
Great Recipe and thanks for sharing!!!
Made 10 gallons using 3.8% 300 SRM roasted barley. Really dig the color, the roasted flavor is mild and balanced. Thought 4% roasted barley would be too much but it's not. I had forgotten how good Vienna malt is. Makes a dry beer taste sweet and full with a...
One more vote of confidence here for the Lallemand Danstar Munich Classic strain. 10 gallons 40% wheat grain bill, IBU 22 Hallertau Mittlefruh, 1.049-1.009 at 67degrees with 2 packets yeast not rehydrated. Finished in 3 days! Raise to 72 for 3 days for diacetyl rest then cold crash a couple days...
At a brewery we used hopunion cascade oil made by supercritical CO2 extraction. 1 ml per barrel added during cold crash. No sense in having aromatics go out the blowoff tube. Pure hop oil was dissolved in everclear (necessary step) and added to the conical for pale and IPA's with flavor...
Biochemists are working on adding hop flavor and aroma to beers using modified yeast that release essential oils into the wort directly during fermentation. Worth a read.

It may be the dual action of still suspended hop particles because the beer is just 2 weeks old and the mosaic. Lots of people love mosaic but some of us taste them differently (phenotypic variability?) and perceive a harsh vegetal bitterness that is just short of nasty. I'm thinking you must...
It was too wet for hops in Keaau (rainforest climate) at 200 feet as the hops matured they became moldy. Lancl what habitat type did you have success growing your hops?
I have two carboys of jaboticaba wine at two different ages. They have been turning out fantastic actually. If anybody wants the recipe it's simple it's 4 lbs fruit per gallon, discard the skins, don't leave the skins on (high in tannin) and sugar to 1.095. metabisulfite and yeast nutrient...
M44 finished sweet and cloudy and tasty. I was very happy with my Amber. The sweet may have been due to high gravity and only using one packet , don't know
