    Rodenbach Clone

Made this brew over a year ago. Used two packets of Wyeast 3763. Fermented like a beast. A lot more blow off than I've ever seen. Did not control temp. Probably reached up to 75F. After fermentation I let it sit for three months. Upon sampling, I thought the sourness could be up'ed a bit...

New Glarus Moon Man Clone Help

Your fermentation length makes me think that something went wrong with this batch. You also should avoid dry hopping for so long...

New Glarus Moon Man Clone Help

I've been meaning to take a third crack at this. The past Moon Mans I've made have been good, but not close. At this point I'm only satisfied with one hop: citra. The rest are what they say: not standard in pale ales. I will be keeping my IBUs lower than my last brew. I may end up choosing...

New Glarus Moon Man Clone Help

This is said earlier in this thread... I don't know how much I buy it. However, I wouldn't be opposed to trying it out just for kicks at this point. I've come to the conclusion that there's no combo of "standard pale ale" hops in this. Theres definitely a few "lurkers".

New Glarus Moon Man Clone Help

I recently made another try on moon man with all later additions of: simcoe, citra, amarillo, and galaxy. Hops tasted 75% there. There's still something missing. There is almost a lactic acid tangy flavor in moon man which is not bitter. I'm really not sure of it. I might add in lactic acid...

This is good news---So do you think we have it figured out?

New Glarus Moon Man Clone Help

I would agree with the insurance policy idea. If I had to brew this again today I would place in Simcoe, chinook, citra, amarillo, motueka, in order, within the last thirty minutes or so. I have a hard time deciding between citra and chinook in their positions. Falconers flight 7C is...

New Glarus Moon Man Clone Help

Please put in a full recipe for the record. I don't think I'm going to get to brewing it until late spring early summer (I have way too much beer). I'm excited to try.

New Glarus Moon Man Clone Help

This was my experience with mine. Did you taste the sample? Mine smelt exact, but the "funky tangy" moon man taste was not there--was replaced with cascades taste. Excited to hear your results so we can post this up in the recipe forums.

Munich Helles 2011 1st Place HBT- Light lager- Augustiner Lagerbier Hell

I brewed this with Wyeast 2565 at its low end (55F) and it turned out fantastic. I would highly recommend using Kolsch yeast with this.

Easy Stove-Top Pasteurizing - With Pics

Just did twelve of these right now. Heads up for anyone, open bottles every day after 5 days and see how it works out. I opened today and they were gushing slightly. One has popped, underwater while grabbing it with tongs. Make sure you pastuerize before it gushes.

New Glarus Moon Man Clone Help

Turn the dry hops down to 1 Oz each or less. Maybe .75 oz. I did 4 Oz last time and it just sucked up beer instead of adding extra flavor. I had a Moon Man yesterday, and I would put in the Citra where the Chinook is. Timing schedule looks fine. Let us know how it turns out.

3 FLoyds Zombie Dust attempt. Help/info requested

I can't read through all 105 pages. I'm confused on the first wort hopping (at 20 minutes boil---what?) and why it isn't adding as much bitterness? My calculated bitterness for this brew is huge. The first post addresses it, but i'm still confused.

New Glarus Moon Man Clone Help

I'm going to be remaking this brew with nearly the same schedule except Chinook only in there for Willamette and Cascade. I've come to the realization that flavoring hops are in that 15-10 minute spot and that the Willamette and Cascade are dominating my flavor. There's something piney in the...
